The Department of Nutrition has defined the following four goals for our current research endeavors
1. Examine the nutrition and health effects of plant foods and plant based diet patterns.
2. Help vegetarians to eat adequately and optimally. This includes assessing the safety, adequacy and optimacy of vegetarian eating patterns.
3. Assess the potential impact of animal vs plant foods on nutirion, on microbial contamination and sanitary concerns, and on the environment
4. Community nutrition
Effects of peanut and peanut butter on blood lipids and glycemic control in adults with type-2 diabetes.
Comparing different types of n-3 fatty acids (ALA vs EPA/DHA) on selected coronary heart disease risk factors on healthy adults (The Omega-3 study).
Postprandial effects of pecan ingestion on plasma levels of nutrients, polyphenolic compounds and biomarkers of antioxidant status in human volunteers.
